Why does good food cost more?

This question comes to me quite often, probably because the food that I make at Smart Cookie Baker costs more than average but also because it's pure, good, real food. I started thinking about how I used to bake and how my baking has changed so significantly.
When I would make chocolate chip cookies, I'd use white flour, butter, lard, Nestle's semi-sweet chocolate chips, sugar, brown sugar, vanilla, baking soda, and egg to create them. When I broke it down like this, ingredient by ingredient, I realized that almost every ingredient that I use in my low carb, gluten free, sugar free treats is more expensive by leaps and bounds than my original recipe. Here's what I found:

The difference was astounding! And I didn't even include all of the ingredients but you get the idea. No wonder I'm spending so much on eating healthy! To go back to eating poorly is not really a choice for me anymore, but when faced with the staggering cost of buying real food, it's just good to appreciate each and every morsel.
The two primary ingredients: flour and sugar, are set at a very low cost to be accessible to everyone but because of the processing, they are two of the most dangerous and unhealthy ingredients listed. By swapping out the flour and sugar for almond or coconut flour and an erythritol or stevia sweetener, you can make a huge difference in your overall health, stamina, cholesterol levels, and well-being. I didn't answer the question about WHY it costs so much to eat healthy, as I could go on and on about government subsidies, big corporations ruling over all the farmers, and the cost of being organic, but you can see that there is quite a disparity. While I would love to see the costs come down, in the meantime, it's good to know that we have choices.
