Turkey "Noodle" Soup
An award winning soup (okay, there were only 6 contestants), this low-carb treat warms your bones on a cold day.
4-8 T. butter or coconut oil (for dairy free)
1-2 onions, chopped
2-4 stalks celery, chopped
1-2 cloves garlic, crushed
1/2 to 1 t. salt
several turns of fresh ground black pepper
1 T. parsley
1 T. basil
1 t. thyme
1 t. sage
1 pound turkey meat, cooked
full pot of Best Turkey Broth (or 8 cups GF broth)
1 medium head of cabbage

Melt butter or oil in a large, deep pot. Saute chopped onions and celery until soft. Add crushed garlic and turkey. Saute one minute, then add broth and spices. Bring to boil. Slice cabbage into thin strips (like noodles). Add to soup and bring back to a boil. Simmer until "noodles" are soft.
